We’re very excited to announce a brand new lineup of Cold Summer Salads at Dig Inn – being served for the first time today! Below is a quick overview of all the new dishes. Hope you get a chance to give them a try sometime soon.
Wild Salmon Salad – finally, a cold protein option

Miso-marinated Wild Alaskan Salmon with cucumber brunoise & red bell peppers, tossed with a red wine / extra virgin olive oil vinaigrette.
Calories: 223 in a big plate serving, 149 in a small plate serving.
Allergens: soy, gluten.
Kale & Apple Salad – replacing our steamed spinach

Chopped local kale w/ shaved green apple & sunflower seeds, tossed in a carrot ginger vinaigrette.
Calories: 94 in a big plate serving, 63 in a small plate serving.
Allergens: none.
Zucchini & Arugula Salad – a perfect summer dish

Local zucchini, local arugula, fresh lemon, extra virgin olive oil & cracked black pepper.
Calories: 71 in a big plate serving, 48 in a small plate serving.
Allergens: none.
Summer Pasta Salad – our first pasta dish!

Organic whole wheat pasta, diced plum tomatoes, local zucchini & grass-fed cheddar tossed in a basil vinaigrette.
Calories: 57 in a big plate serving, 38 in a small plate serving.
Allergens: dairy, gluten.
PLUS: Roasted Vegetable Medley – replacing our brussel sprouts

A mix of seasonal, locally-available vegetables tossed in extra virgin olive oil, sea salt & cracked pepper and roasted to perfection. We’re planning on keeping this one on the menu throughout the seasons and just mixing up which veggies are included.
Calories: 92 in a big plate serving, 61 in a small plate serving.
Allergens: none.
And a couple of other smaller changes
We’re also rolling out a brand new House Hot Sauce (per our post from last week, it’s replacing our other hot sauces), which we’re really pumped about. It’s got some serious heat and a delicious smoky flavor.
And we’re going to be adding a Summer Gazpacho on Monday, which will make for a nice, cold addition to any big or small plate (for just $2.53).

Hi quick question about the salmon salad, is the gluten only in the form of soy sauce? Or is there something else added to the salad that contains gluten? Thanks!

Hi, Matt. Thanks for asking and good question. The gluten comes from the miso paste that’s a pretty key part of the recipe. Hope this helps. Best, JC

Thanks! We love it, too. We do share recipes, and you can you find some of them here on this blog, but we haven’t shared this one yet. But I’ll be sure to let Chef Daniel know…perhaps he’ll do a recipe post for it at some point.
